The Three Cacti of the Umbral Sands: Water, Steak and Desert Cloth

The Umbral Sands has three cacti and none of them do the same job. Barrel cactus gives you a drink. Bunny cactus gives you a meal. The fibrous pipe cactus gives you the fibre for power level 7 armour. Two of the three also hand back their own seeds, which makes them the rare desert resource you can farm rather than hunt.
And two of them carry the same perk: Frosted Flavours, which grants resistance to scorch buildup — the thing the desert is actually trying to do to you.

Both are always-drops, not chances — every barrel cactus gives 2–3 cactus water and 1–2 seeds, every time.
Note the respawn condition. Both respawn after three in-game days "as long as players do not place anything directly on the node's spawn." Building over a cactus patch permanently removes it — which matters if you are setting up a desert outpost.
The seeds are the point. Two to three products and one to two seeds per plant means a cactus patch is self-sustaining if you farm the seeds rather than relying on wild respawns.
Two Woodcutting XP each is negligible, so do not treat cacti as a training route.

Frosted Flavours grants resistance to scorch buildup, and both the drink and the cooked steak carry it. In a biome built around heat, that is the reason to eat local rather than carry food in.
Do not try to eat the raw steak. Its description calls it "a moist and sweet botanical edible" with "a fresh floral fragrance" — and the wiki adds the correction directly: "Despite the description, this item is not edible without being cooked."
Cooking it has a real level requirement. Seared cactus steak needs Cooking 50 to cook and Cooking 75 to stop burning it, at a campfire or grill, for 10 Cooking XP. Below 75 you will be producing Burnt Cactus Steak part of the time.
The water lasts two and a half times as long as the food. 300 seconds against 120 — so the drink is the one to take into a long expedition, and the steak is what you eat before setting off.
The Fibrous Pipe Cactus

The third cactus is not food at all.

Its description explains the odd processing station: "A complex network of fibres and water reservoirs. Can be tanned to produce a durable material." — which is why it goes to the tannery rather than the spinning wheel.
Three fibres per cactus is exactly one desert cloth's worth. Desert cloth needs 3 desert thread and 3 cactus fibres at a loom, so one fibrous pipe cactus = one desert cloth's fibre requirement, and desert cloth is what power level 7 armour is made from.
The published location is singular. The wiki names one place — west of the Moon Garou tribe, by a yew grove — so treat pipe cactus as a destination rather than something you gather in passing.
Working the Desert

- Farm the seeds rather than the wild plants. Both edible cacti return 1–2 seeds per harvest, which makes a plot self-sustaining and removes the three-day respawn wait entirely.
- Do not build on the nodes. Anything placed on a cactus spawn stops it respawning.
- Bring Cooking 75 before relying on steak. Fifty gets you cooking; 75 is what stops the burning.
- Carry cactus water for the trip, not the camp. 300 seconds of Frosted Flavours and 25 hydration per drink, against the steak's 120 seconds.
- Make a dedicated trip for pipe cactus. One published location, three fibres per plant, and one plant per desert cloth.
