The wheel is unlocked by picking up clay. Receiving clay in your inventory for the first time unlocks the recipe — no quest, no level requirement.

Pottery pays double the XP of charcoal or adhesive — 40 against 20 — which makes it the best thing to leave the kiln processing overnight if Artisan is what you want.
But the kiln is a single queue. Charcoal for your furnace, adhesive for fuel pellets, vessels for potions and wild anima for super potions all compete for the same station.
Build a second kiln early. It costs 8 Ash Logs, 20 Stone, 6 Clay and 10 Fire Runes — cheap enough that a bottleneck is a choice rather than a constraint.
Superheat helps here too. The Artisan 20 spell adds 90% processing speed for 30 seconds to any fire station, and the wiki specifically names "rapidly processing clay vessels and adhesive" as its best use.
